Could someone please tell me the symptoms for ammonia poisoning?

You didnt specify a species or circumstance, theres no 'of course' about it.

I believe its the usual sort of symptoms, respitory distress characterised by gulping at the surface in aquatic species, aversion to polluted water, behavioral changes, loss of appetite.

I suppose the obvious answer would be if a sal was displaying abnormal behaviour and a water test displayed high ammonia levels?

It could cause a lot of different symptoms, I suspect. In addition to the ones Lasher mentioned, skin problems, bloat, infections. But all of these things are general symptoms of "sick amphibian". Ammonia usually occurs in new setups, which usually contain newly-acquired animals. Thus, it's pretty hard to distinguish the effect of the ammonia from the effect of whatever hardship the animal endured prior to purchase.

the first symptom you will find is the newts will leave or try to leave the water even the normally aquatic ones such as paddletails and cfbs.
