I want to get some live plants for my salamander enclosures. Are there any plants that are dangerous and harmful to them that I should avoid?

Not really, most aquatic plants are safe. Some good, hardy plant species for caudates are: Java moss, java ferns, wisterias, najas grass. Elodeas are good if you have a fair amount of light.
