HEY! The ceviche was AWESOME! I used orange roughy, scallops, shrimp, cilantro, sweet onion, green onion, tomatoes, garlic, cucumber, avocado and limes. I need to figure out a way to cook scallops without turning them into rubber chunks. Becuase avocado gets smushy when left in a salad I didn't add it to the bowl and wound up eating the ceviche without it. But I remembered and added it, and it just made this HUGE difference. Something is missing though... I think it needs jalapenos for sure there was NO BITE at all in this. Maybe a bit of cayenne.....
