Are salamanders good with soft water and can moss also grow with it

Salamanders aren't particularly good in soft water as they need a good amount calcium, but it is livable. Depending on how soft the water is, you might be fine buffering the water with some limestone rock or other source of calcium carbonate. You could also consider feeding a more high calcium diet, maybe via adding powder on whatever you feed them. Though just buffering the water would be easier to monitor.

As for moss, again maybe tying it to a chunk of limestone might be a safe bet. But otherwise, I don't believe there should be much of an issue with growth so long as temperature and light are correct :)
