My axolotls used to swim a lot, especially Nerina. She used to swim under the filter and swim back and forth having fun. But, about 2 weeks ago I added more things to there tank. I added a piece of log for them to hide and some fake plants. Ever since then all she does is hide in the plants. Should I rearrange the tank every now and then, such as taking the plants out for a few days so I can see her swim? then putting them back in. I have rearranged the plants in the tank a couple different ways to see if they will swim around more, but no luck.

Actually, it's probably a good sign. A healthy acclimated axolotl doesn't really move around much. When they do, it's often a sign of stress. In time, they'll learn to "come running" when you come with food, that's about as much activity as you should hope for.

with axolotls would I basically have to keep buying and buying new axolotls to prevent inbred breeding which costs a lot of money??

Not necessarily but if you’re wanting to continue to grow your breeding capacity then yes. Breeding axolotls isn’t a cheap hobby nor is it a get rich quick scheme. It costs a lot of money and time and deditcation

Would Chinese fire belly newts be more or less inclined towards an aquatic eft set up versus Japanese . I'm raising them and have abandoned the terrarium at about 5 months old and switched to the aquatic setups you describe. I'm wondering if I could do this as soon as they morph?
