Ammonia readings in cycling

A little bit of background first:
10 gallon tank
2 barbs (teeny feeder fish) in it
sponge filter powered by air pump
water about 3/4 to full
axie is NOT in there yet

ok so for my question...
i started the cycle two weeks ago and last weekend (after the first full week) I went to get my water tested at a petshop as well as my tapwater. I dont have test kits yet. (I only have one 10 gallon aquarium lol)

heres the results
Tank water-
Ammonia-0
Nitrite-0
Nitrate-0
pH-7-5 to 8

tapwater-
ammonia-0
Nitrite-0
nitrate-0
pH-6

*she also said I had soft water, which was from the tap*

1) why do I have no ammonia even though its only the beginning of the cycle and there ARE fish pooping in there lol Im just confused why my tap/tank water are almost identicle...from my understanding, cycling only takes a month.
2)how do I turn soft water hard? is distilled water not hard OR soft? (i know about the chlorine problem)
3)she told me to do water changes every week, about 80%. If I do that, wont the cycle take longer? I know the fish will most likely die lol but I have a bunch of them. I just want to know if I should do water changes while the cycle is going.

    with axolotls would I basically have to keep buying and buying new axolotls to prevent inbred breeding which costs a lot of money??

    Not necessarily but if you’re wanting to continue to grow your breeding capacity then yes. Breeding axolotls isn’t a cheap hobby nor is it a get rich quick scheme. It costs a lot of money and time and deditcation

    Would Chinese fire belly newts be more or less inclined towards an aquatic eft set up versus Japanese . I'm raising them and have abandoned the terrarium at about 5 months old and switched to the aquatic setups you describe. I'm wondering if I could do this as soon as they morph?
