Nitrite and Ammonia Charts for Tank Cycling

I've been hunting down more info about the nitrogen cycle and found a cool page that has charts to keep track of your nitrite and ammonia and what to do.

I am curious, I know bacteria help change the forms of the ammonia, how exactly does it go?
ammonia, nitrite, nitrate? I found this little plant (live) that grows off of nitrates, as in it obsorbs (sp?) them; I think this might be a VERY good plant to have in an axie aquarium? Here is the plant, have'nt found a source of it for sale though...

Yes, bacteria break down ammonia into nitrite into nitrate. All plants absorb nitrogen as a food source, so any plant is good for axies in that regard. I use live plants in all of my tanks, and consider them not just as decoration but as part of my filter system.
