Hello!
I've kept pleurodeles w. before for a long time with a full water aquarium, they where healty and I've never noticed any problem. Once I put a floating deck for them and they couldn't care less about it...
I've read several times they need a low water level (aprox 20cm) and a dry land area.
I'm doing this new terrarium, what are your opinions:
They would benefit more from a deep water aquarium or a nicely done paludarium?

Mine are in a large aquarium with no land, though they do occasionally rest in the floating plants at or near the top. I've never seen one leave the water unless they had to.

They are fine on land or in water. For me they are easier to feed in water.

You can compromise with an aquatic tank with a couple of haul-outs.
These days my favorite is to have a clay pot bottom at the water line with small rocks. I drill a couple holes in the bottom of the pot to facilitate water into the pot. ALso I have an example here with a plastic tray. Also with holes drilled in. ANd finally the standard pet store tank decoration.

edit: I tried uploading those pics on the right twice, I don't know why they are loading upside down and I can't seem to fix it.
