I was just wondering what level the ammonia in the tank should be at and what I can use to lower or increase it depending on its level?

Should be at... 0? If the tank is cycled it should be at 0.

Ammonia and nitrite should both be at 0ppm to ensure that the inhabitant is safe. If you've already cycled your tank, this is what the reading should already look like (0ppm ammonia, 0ppm nitrite, some amount of nitrate <40ppm). If you have not cycled your tank, then you are going to have to do daily water changes to ensure that the ammonia and nitrite levels don't become toxic if you've already put something in it.
