Aquarium sand

I recently was given a newt from a friend and hastily set up the aquarium with gravel. I am discovering how annoying it is to clean gravel, so I would like to take out the gravel and add sand. While I am at it, I would like to add live plants and possibly create some underwater structures. I've seen some of the aquariums on the forum (which have inspired me) and have decided to make this whole newt thing a full blown hobby.

So, how do I go about choosing sand for the aquarium? Does any aquarium sand work or is there something that would work especially well with newts?

As far as live plants go, I've seen other posters suggest good plants for newts, but are there plants that are especially happy in a sand substrate?

Lastly, I've seen other posters talking about creating underwater structures using "Great Stuff" or other products of the sort. Any guidelines or tips with such a product? Photos would also be helpful.
