So today, whilst I was peacefully observing my axolotls during 'feeding time', I witnessed my axolotl, Pitaya, attempt to take a bit out of his own tail! Could somebody please tell me why he is doing this? Has he mistaken it for food?

I really appreciate your help in advance and will try to reply to all of you, thanks!

I'm pretty sure that's why they call them "mudpuppies" :p (Just kidding!)
Most early amphibians have very basic vision and during feeding can often mistake their limbs or moving limbs of their tankmates for food, wriggling around.

Or, if they're anything like fish, sometimes when they get stressed or bored, they just need something to chew on. If this activity takes place outside feeding sessions, try adding some sort of stimulus to the tank.
