C.p.sasayama eating gurgete

Sometimes I put in my tank of C.p.sasayama a slice of courgette to feed the shrimp. Here is my amazement when I see the playful to bite it. But even stranger was when I saw them to swallow the bits that broke.
My question is: Is this normal behavior?
