Question: DIY Frozen Beef Heart

Hi everyone, I was going to post this in the Frozen Foods Discussion board, but it looked pretty dead over there. I'm asking this with regard to my adult axolotls, so I'm going to post here:

I'm wondering if anyone has experience with purchasing fresh beef heart from a butcher and freezing it yourself. The packages they sell at pet stores are something like $6 for 3.5 oz, and my local butcher sells fresh beef heart for $6.99/lb. I told the guy I go through close to a pound a month, and he said a whole heart should last a while.

Has anyone tried this? I imagine I'd have to cube the heart up into bite-sized chunks first, but then I'm wondering how I should package it for freezing. Do you think there would be any sections I should discard and not feed them?
