Levels for water testing for kh/gh

someone please tell me the levels theses need to be

i keep my general hardness at about 8 - 12, which is medium hard.
I am unsure of the carbonate hardness needed, but I know it affects ph. When my carbonate hardness is at about 2 - 3 the ph is perfect.
I also wanted to ask again about what could bring down my ph... everyday my carbonate hardness is back to 0 and my ph is at 6 or under.
I've removed the axies at this point, as I fear stressing them with constant ph fluctuation. So I am open to any suggestions. Some of you may remember this is an ongoing problem, I just changed my sand thinking that was the problem...... and it wasn't!!! grrrr.
