Would feeding axolotl's New Life Spectrum pellets be a good source of food and be healthy for them?

No. Those are formulated for fish - goldfish/tropical fish etc. You need pellets specially formulated for axies and salamanders.

You can also use pellets for large carnivourous fish in a pinch, as long as they are fish and mollusc based with very little fibre or algae.

Earthworms are the best food for axies though.

I feed my axolotl New Life Spectrum Pellets.

So does this person:
New Life Spectrum Fish Food
...but he also keeps his axolotls with goldfish which is highly discouraged around here.

However just because I do it, doesn't mean it's ok. Also just because everyone is saying the same thing, doesn't mean it's true. I will report my findings for scientific reasons.

First I fed my axolotl an off brand of "salamander pellets" the first ingredient was "liver" which I assume was chicken and/or beef, but really, I have no idea. I believe that they constipated him because I only found a hard small poop every 3-4 days. Also he wasn't gaining weight, being thin coming from the pet store.

I switched to NLS pellets, after reading the ingredients which are:
krill, herring, wheat flour, soybean, fish oil, algae, vitamins A, D3, B12, B2, H, B1, C, and E.
The guaranteed analysis is 34% protein minimum and 5%fat minimum

After switching he began to fatten out and he grew from 2.5 inches to 5 inches in 2 months. He poops once every other day (at around 10am, ridiculously regular), and the poop is the consistency of wet soil and bright orange in color. He also became MUCH more active and slept less; although I cannot say the change in food is absolutely responsible for the change in behavior.

I noticed that after reaching 5 inches his growth has slowed down considerably. Also even though he eats until full twice a day (2-3 pellets each feeding) he has also plateaued on weight gain and stopped getting fatter when the stomach reached a little less than the thickness of the head. For these two reasons I am now considering an alternate food source, either supplemental or as a replacement staple.

I would recommend pellets specifically designed for axolotls myself. However I would highly recommend earthworms as a staple diet. They are nutritious, not messy and you can start an earthworm farm for a good and cheap supply :)
