So I have my 6 month old Axolotl and he’s been really good so far, I feed him on a mix of frozen food and pellets, sometimes live when I have access to it (which is not often), but in the past couple of days he hasn’t been eating and when I dropped a couple pellets on his head (my usual way for him to know it’s food time) he sucked it in like he usually would, but he immediately spat it back out. Otherwise he is doing fine, and I’ve checked his water levels and everything is normal, so I’m not sure what to do!

I've had this happen as well. I believe they will reflexively snap at the movement, but if they are not interested in eating, back out the pellet comes. I've had it happen with worms too. Conversely, they will make a snap at bubbles or who knows what when they are hungry. Like they are saying "hey lady, feed me!"
It has also been my experience that as they age they will begin to space out their feedings and not always eat as much at one time. Two or three days between meals is not unusual for my Axolotls. Or if they're really hungry they'll eat every day, then quit for a couple of days. I offer, and if they are not interested, I try again the next day.
Recently our tank had a nitrite spike and with all the stress they stopped eating for 5 and 6 days respectively. I was worried, but they started eating again as soon as they felt better.
I've also noticed that if their water temperature is lower than the norm, even by a few degrees, their metabolism will slow, and they will eat less.
Bottom line, I don't think you have anything to worry about.
