if i were to get a hold of a single egg would i be able to just put it in my tank and it will hatch?

Probably -- v high success rate for axolotl eggs hatching. You'd need a live food supply ready for once it had hatched though. I've got about 100 have just hatched. V cute.

If your tank has adults, it will probably hatch and then promptly be eaten.

This is basically what I am going to attempt as well.

I dont want a multitude of axolotis, so I wonder how many eggs I need to start with.

I an in the exact same boat as you. I dont want a tank full of these guys, but I definitely to want a couple.
Im hoping to have the same luck with just putting the eggs in my fully cycled tank and keeping my fingers crossed.
