Need tips when making own pellets

Hi! Earthworms is hard to get during our long cold winters here. Also my axies are used to being handfed and really dont get the idea with small larvae anymore so the process is pretty messy. And my axies has no problems with pellets if i handfead them. so I thaught i'd make my own pellets so i can manage a better diet for my axies during this time of year when i can't find live food.
So making my own pellets, is there something to think about? Something I should not do?
Also in some recipes people have used flour and in some gelatin, is both okey to use ?

I'd just buy the pellets made, with the correct nutrients and vitamins. The problem is that i'm looking for something i can handfeed them. So small sized pearl pellets doesn't work well I'm afraid.

I've seen that recipe too it just didn't answere all my questiones. I just wanted to check here and see if their was any big no no or something, just incase i've missed something.
