Had my axolotl about 2 weeks now. Tank is still cycling so I'm doing daily water changes of between 20 and 50% to keep the nitrite level below 1ppm (ammonia is always 0).

Doris has been pretty stressed throughout with his/her gills always pointing forward as you see in this picture, and occasionally swimming around the tank in a fairly crazy fashion, although he/she's been doing this a lot less recently.

I'm also a little worried about some white spots on his/her body - you can see them in this photo, above the back leg. Is this something else I should be concerned about? It's not fuzzy like some of the fungus pics I've seen on this website but it doesn't look the same as her natural colouring.

I can't tell from the photo, but are those iridiphores? If you shine a flashlight at them, are they gold?

I just tested this and no, they aren't reflective at all. They just look like small (maybe 1-2mm) white patches.
